Currently, we are being absolutely blown away by the rich and dense flavours of chocolate, dark fruit, dried cherry. This is a wild and funky fun cup of coffee.
Marysabel Caballero comes from a coffee growing family and has named this particular lot of coffee after her mother, Sandra Isabel.
Moises Herrera, Marysabel’s husband, works alongside his wife as a coffee producer as well. He began producing natural processed coffees just a few years ago. Drying natural coffees in the municipality of Marcala presents a challenge due to humidity and rain. Moises has created techniques for dealing with the climate. Coffees to be processed naturally are picked ripe, dried on covered raised beds. As they begin the 20-40 day drying process the cherry is spread out quite thinly at first and as it begins to dry the can increase the thickness so it doesn’t take up as much space on the drying beds.
